Pancakes

Eden wanted to make pancakes for breakfast the other morning and while I was still in bed she did.  They didn't work out but I loved that she tried.  I should have got a photo of that.  I ended up making some pancakes for them even though they were late to school, Eden is like me and once she has something fixed in her mind she doesn't like to let go of it...  




Pancakes

2 eggs
2 bananas
2 tsp baking powder
2 tsp natural vanilla essence
2 cups milk
2 cups spelt flour (or any other substitute)

Blend together in thermomix, blender, or use a whiz stick.  Cook on medium heat in a tiny bit if extra virgin cold pressed coconut oil. Top with cream and berry compot ( which is just frozen berries, juice of half of a lemon, and a bit of sweetner, I used coconut sugar and a tsp raw honey.  Make a big batch so you can have it in the fridge for the week.  Another use for the berry sauce is to add it to Greek unsweetened yog  with diced apples and pears.
